Nicola Gatta, producer of Gussago, produces this sparkling wine “Ombra” for which the harvest is carried out strictly by hand in boxes; Fermentation takes place without contact with the skins and spontaneously thanks to indigenous yeasts. The cuvée is created with most of the grapes of the current harvest and a part of the reserve wine of the previous year, aged in concrete tanks. The wine is bottled and so the second fermentation takes place in the bottle that allows the “second fermentation”; The wine then ages for about 30 months on its lees until remuage and disgorgement. The dosage is Brut, with about 7 g / l of cane sugar dissolved directly in the wine at the time of disgorgement.
