The Cherubini estate is located beyond the borders of eastern Franciacorta surrounded by natural parkland in the Brescia hills, just a few kilometers from the city center. This valley is home to a terroir that has been formed over millennia, with underground aquifers and limestone-rich rocks with a clay substrate. These soil characteristics combined with a constant light breeze and temperature ranges give the wines minerality and acidity typical of this terroir. Conventional farming products are not used, such as weed killers or pesticides.
Sui Generis is a pure Chardonnay that undergoes a gentle crushing and spontaneous fermentation in cement vats for about twenty days. At the end of fermentation, it is siphoned again into the concrete tank where it rests until second fermentation. The wine does not undergo clarification or stabilization treatments. After aging for a minimum of 36 months, it is disgorged and the same wine is used for topping off.
Pale gold in color, with excellent hints of flowers and exotic fruits on the nose, and very assertive and elegant on the palate.
