Rosso Toscano IGT “Scipio ” 2016 – Tenuta Sette Cieli

The Sette Cieli Estate, established in 1998, is located in an enchanting place on top of the hills situated above Bolgheri and Castagneto Carducci. Surrounded by the dense woods of Monteverdi Marittimo, it overlooks terraced vineyards and the Tyrrhenian Sea and overlooks the “Bolgheri Amphitheater”; Cultivation is organic and every operation in the vineyard is done by hand conscientiously and patiently, precisely so as not to alter these ideal conditions and in the knowledge that each individual plant has different characteristics and needs.
For this pure Cabernet franc, alcoholic fermentation occurs spontaneously with indigenous yeasts in temperature-controlled steel tanks with maceration on the skins for about 25 days. Malolactic fermentation takes place in French barriques after alcoholic fermentation is aged 24 months in French oak barrels and in bottles for 12 months
