Made from 100% Merlot grapes, this wine comes from areas of our vineyards that are particularly suited to the characteristics of this wine variety. Grapes are hand-picked when perfectly ripe, later than the usual local custom. Fermentation takes place in stainless steel tanks for about 18 days followed by racking and crushing. Malolactic fermentation is spontaneous, as with all our wines. After an initial racking, the wine is placed in French oak barrels for 20-22 months.
