The fermentation of this 100% Syrah “Suisassi” from Duemani is spontaneous in barrique and 1000-liter oak troncoconic vats with manual punching down and attention to temperature control. About 30% of the grapes ferment with the skins. It remains in maceration for 30 days, then is drained and racked. The aging is for 22 months in French oak barriques and 300-liter tonneaux, 80% new wood and 20% first passage.
It does not undergo clarification or filtration.
On the nose, it has hints of ripe cherries, wild blackberries, black currants, nutmeg, licorice, mahogany, moss, and a bit of dried thyme. It is full-bodied and smooth, with intense aromas of black fruit, wonderfully balanced with notes of wood, spices, and smoke. The tannins are velvety and integrated with harmony and precision.
