Primitivo di Manduria DOC’s Carrubo grapes were harvested when slightly overripe. Maceration occurs after crushing and is managed with gentle pumping over and takes place at a temperature no higher than 27°C. Malolactic fermentation happens in steel. Then after aging in 500-liter French oak barrels – partly new and partly second hand – the wine rests in the bottle for 8 months before being released. Intense ruby red in color with violet hues, Carrubo is rich and complex on the nose – Morello cherry, liqueur cherries and prunes combine with licorice, vanilla, chocolate and amaretto. The palate is soft, full-bodied and has excellent length, elegant tannins and pleasant freshness.
