Grapes for Sauternes at Chateau de Fargues are only harvested when they have reached a certain degree of super-ripeness and, due to the grapes’ slow and uneven ripening, the harvest is carried out several times. The harvest period is particularly long, as is the fermentation – the period when the aromas that make this wine unique worldwide develop.
