Sauternes ASC 2018 – Château Les Justices

Sauternes grapes are harvested only when they have reached a certain degree of super-ripeness, and because of their slow and uneven development, harvesting is carried out several times. The harvest period is long, like fermentation, during this stage the aromas develop, making this a unique wine in the world. Aging takes place in oak and marketing begins at least 2 years after the harvest.
