Domaine Vincent Girardin is located in Meursault, near the Côte de Beaune in Burgundy. Vincent Girardin was from a winemaking family in Santenay going back to the 17th century. In 1980, at the age of 19, he wanted to become independent and started with the two hectares of vineyards he inherited from his parents. Soon, the quality of his wines was recognized worldwide and allowed him to expand the business by focusing mainly on the great whites and reds of the Côte de Beaune (Meursault, Puligny Montrachet, Chassagne Montrachet, Saint Aubin, Santenay, Savigny Les Beaune, Aloxe Corton, Volnay and Pommard). In 2012, Vincent Girardin handed over his business to a long-standing partner of the Maison, Mr. Nié, president of the Compagnie des Vins d’Autrefois in Beaune.
Harvesting is by hand, then the grapes are sorted twice (at harvest and on the table), then they are partially destemmed. After this, they are transferred to thermoregulated stainless steel tanks. Alcoholic fermentation begins with natural yeasts and lasts about 3 weeks. Pumping over and punching down are carried out very gently. Soft pressing. During aging, the wine is transferred to barrels following a short period in 20%-new French oak barrels. Malolactic fermentation begins spontaneously and aging on the lees lasts 14 months.
