San Giusto a Rentennano’s Chianti Classico is Produced from Sangiovese (95%) and Canaiolo (5%) grapes that are hand-picked when perfectly ripe and fermented in enameled concrete and/or stainless steel tanks for about 14 days, during which time there is a variety of pumping over and punching down. Racking is followed by pressing the pomace in a horizontal press, and the press is returned to its wine. Malolactic fermentation is aided by heating the room in which the wines rest. Racked a few times (racking) it matures in barrels, 500-liter oak tonneaux, for about 10-12 months. Once bottled, it ages 6 months before being marketed.
