Vilmart & Cie winery was founded in 1890 and is located in Rilly la Montagne in the northern part of the Montagne de Reims, having carved out a respectable place for itself in the Champagne scene. The estate farms its 11 hectares of vineyard, all Premier Cru, growing mostly Chardonnay vines. The Maison has long held the Ampelos charter, which certifies environmentally friendly organic farming. Producing about 100,000 bottles, the estate is led by Laurent Champs, which combines the organic approach with traditional winemaking where fermentation and aging take place in wood and, most importantly there is no malolactic fermentation, leaving the grapes’ natural acidity intact.
