Vinification: from the single vineyard Ravera which is located in the municipality of Novello, with about 4900 plants per hectare of 25 years of average age. The oldest part was planted in 1935. Ravera di Novello is a fabulous hill with south-west exposure, with calcareous-clayey soil. With an area of 3 hectares. The fermentation lasts about 4/5 weeks in steel tanks in contact with the skins. This time includes pre and post fermentation maceration with the use of the ancient method of submerged cap. Slow malolactic fermentation in large barrels, until late spring. The wine then remains more than a year on the lees of malolactic fermentation without decanting.
Ageing: 32 months in large oak barrels. Bottled without filtration.
