The spearhead of this winery comes from Sangiovese grapes 70%, Cabernet Sauvignon and Cabernet franc 20%, Merlot 10%. Harvested manually and vinified separately with spontaneous fermentation and contact with the skins for 18-25 days. The malolactic fermentation is carried out in oak barrels French, where the wine stays for a minimum of 18 months in barriques and then is bottled without filtration or clarification, to finish it is aged at least six months in the bottle.
Excellent with meat and game dishes.
