Portofino DOC Spumante Metodo Classico “Abissi” 2018 – Bisson is a sparkling wine with a good straw-yellow color, fine and persistent perlage, intense bouquet with ample nose that varies between musky and brackish notes, and it has a dry, long flavor with a distinct minerality.
Harvest is done early and the preparation of the base sparkling wine uses a cryomaceration technique, and fermentation at controlled temperature. Drawing and bubble formation.
The wine bottles are then placed on the seabed in stainless steel cages at a depth of 60 meters, remaining at a constant temperature of 15°C for at least eighteen months. Racking and disgorgement happen by adding with the same sparkling wine with no added sugar.
