turriga is aged according to the technique of delestage, which consists in transferring the liquid part of the vinification in a second tank, and then putting it back into the first tank, where the residue, or the cap, remains. This stage is followed by the last two, where the actual maturation takes place. The wine rests in oak barrels for a time of about 24 months, and then another 12 months in the bottle.
