The Champagne is made from a blend of Pinot Noir and Chardonnay grapes, sourced from the Grand Cru vineyards of Mailly-Champagne. The grapes are hand-harvested and pressed gently before fermentation in stainless steel tanks. The wine then undergoes malolactic fermentation and is aged in oak barrels for at least 12 months.
The result is a Champagne with a beautiful pale gold color and a fine mousse. The nose is elegant and complex, with aromas of white flowers, citrus fruits, and toasted brioche. The palate is full and rich, with flavors of ripe white fruit, honey, and almonds. The acidity is balanced and refreshing, leading to a long and lingering finish.
