This cuvée comes from the blending of several plots located exclusively in the village of Bouzy (Grand Cru, Montagne de Reims). The soils, clay and limestone, are characterized by the presence of a gypsum substrate. The vineyards are south-facing and planted, for the most part, from mass selections of old vines owned by Pierre Paillard and Pinot Fin.
Vinification Developed mainly from the 2015 vintage, this cuvée is aged on fine lees for four years. The dosage of this Extra Brut Champagne is 1.8 g/L.
This champagne fully reflects the terroir of Bouzy, harmoniously combining the power of the south-facing Pinot Noirs of the Montagne de Reims with the finesse imparted by the chalky component of these soils.
