Domeine Vouette et Sorbée is managed by Bertrand Gautherot, récoltant manipulant from Buxières-sur-Arce in the Côte des Bar. The property’s five hectares rest on soil with characteristics very similar to those of Chablis, made of Kimmeridgian marl. The vines are mainly planted with pinot noir and have an average age of 21 years. The land is conducted entirely in accordance with organic farming criteria, and the farm has held Demeter certification since 1998. Harvesting is always by hand, and vinification takes place in oak barrels with the grapes’ own indigenous yeasts. Finally, the disgorging of the champagnes is done as in the past, “à la volée,” and without any addition of dosage liquor.
It has a bright straw yellow color, fine perlage. The nose shows great complexity and intensity: hints of delicate white flowers and small red fruits (currant and black cherry), dried fruits, brioche bread and vanilla. On the sip, great fresh and mineral momentum develops in a dense aromatic texture with sustained structure and unstoppable energy. Closes long and harmonious.
