The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes are blended with a small proportion of Grechetto for a wine designed to age over time and reflect the elegance and complexity of this unique place. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and aging in barrels in its first vintage, in 1985.
Straw yellow in color, it denotes its intense, complex nose, with aromatic scents of citrus, pears and acacia flowers blending together with vanilla. The palate is full and well structured, with soft notes of butter, hazelnut and a good persistence and mineral note. Pair with white meats and poultry.
