For Guidalberto the Harvested has been from early September until mid-October. The grapes are fermented in steel vats at a controlled temperature of 30-31°C and undergo a maceration process that lasts for 15 days, for both grape varieties. The wine is aged for 15 months in French and minimally American oak barrels, then rests in bottle for an additional 3 months.
