Acquerello combines the simplicity in cooking of white rice with the most important nutritional elements found only in brown rice. It takes 20 delicate steps to arrive at Acquerello rice. Starting with the propeller, still considered the best method for whitening rice by rubbing the grains. The raw rice is aged at least one year in silos at a controlled temperature below 15°. The starch stabilizes and less is dispersed during cooking, and each individual grain increases its ability to absorb seasonings.
