Classic Passito di Pantelleria that has made the island famous over the centuries for its sweet, fragrant and persuasive wines. The grapes of Muscat of Alexandria from which this wine is obtained, come from different vineyards scattered on the island. The bunches, once selected, are left to dry on “stinnitoi”, for twelve to eighteen days and patiently turned by hand. The grapes are then crushed and the must, rich in sugars, fermented at a temperature between 25 and 28 °. Subsequently, the wine ages for about eight to ten months in steel tanks.
