Moscato grappa is made in an ancient discontinuous direct-fire still with submerged pomace, one of the few in the world still active for distilling grappa. This procedure, which requires fermentation of the muscat pomace before distillation, was perfected by Romano and to this day is strictly adhered to as it ensures the perfect retention of all the aromatic components crucial to the organoleptic characteristics of grappa.
