The vineyards of Nerello Mascalese, and in a small part of Nerello Cappuccio, are located between Randazzo and Castiglione di Sicilia, between 730 and 750m above sea level. This area north of the volcano is characterized by rainfall below the average of the other sides of Etna. Summers are cool, characterized by strong temperature variations between day and night. The manual harvest of the grapes takes place in the first half of October, with careful selection of the bunches. Upon reception in the cellar a second selection is carried out, then fermentation takes place in steel with maceration on the skins for 8-10 days at a temperature of 25 ° C. The aging of 14 months is conducted in cement tanks and partially in French oak (barriques of second and third passage), then at least 10 months in bottle before being marketed.
