Romain Hénin is a young winemaker based in Aÿ in the Montagne de Reims in Champagne. The winery was founded by his father, Pascal Hénin, an independent picker and winemaker. Since 2021, Romain Hénin has been in charge of the vineyard and winemaking. Drawing on his experience with Sébastien Mouzon and Henri Giraud, he works carefully and rigorously with respect for the environment, with a plan to convert the entire farm to biodynamics.
The vineyard covers several major Champagne terroirs: Aÿ and Chouilly for Grands Crus, Mareuil-sur-Aÿ and Dizy for Premiers Crus, and in the Marne Valley in Cerseuil and Troissy. This diversity of terroir allows the richness and aromas of Champagne’s three main grape varieties to be harnessed for blends. The wines are natural, made without additives and without sulfur dioxide.
The Blanc comme Neige cuvée is Pascal and Romain’s last wine on the family estate, witnessing the transmission from a father to his children. This Champagne is made from Chardonnay, from the Grand Cru Chouilly. It was disgorged on October 12, 2022, during the harvest, and is dosed with fresh grape juice with an Extra-Brut dosage of 3 g/L. The label was created by Lyon artist Bur, who was influenced by street art and pop art.
