With their friends’ wine as a starting point, one of the most appreciated wineries in the area was created, but without much self-congratulation. The Salvioni winery was established like this – grandfather Umberto’s fun became a job for his son Giulio and, finally, also for grandchildren David and Alessia. Production is still limited to a few bottles, but there is no shortage of acrobatics in the cellar to produce them. They laugh about it, with smiling resignation, as we do in response to the weather leading each vintage: 2018 was wet – rainy enough to force two harvests. Fermentation, however, is done by the book: what comes out is a Brunello with less body but more enjoyable, fresh with gooseberries and small red berries, full-bodied and citrusy, with a flowing, iodine-infused palate.
