Manual bunch-by-bunch selection from the best vineyards, with yield limited to about 0.8 kg per plant. Grapes are often harvested after the standard ripeness levels. Fermentation and maceration take place in enameled cement tanks, lasting for up to 30-35 days. Maturation takes place in 500-liter French oak barrels and casks for 20-22 months, aging 18 months in bottle.
