To the eye it is striking for its decidedly original label, created from drawings by Romano Levi. But one only has to pour it into the glass to realize that the emotions it is capable of giving are not limited to a mere “artistic” aspect. The raw material, after all, is of superior quality. It starts, in fact, from the pomace of Nebbiolo from Barbaresco, Dolcetto d’Alba and Barbera d’Alba. Typical vines of the Langhe, first used to produce wines destined to leave a mark in the memory, and then capable of being transformed into extraordinarily balanced grappas, thanks also to the long period of maturation in wood. A transparent straw yellow, the nose of this grappa is striking for its aromas reminiscent of fresh herbs, hints of wood and licorice. The same sensations we also find on tasting, where Levi’s Paglierina is also, and above all, appreciated for a nice dry taste and long, pleasant finish. It is the distillate to be stored a few steps away from the dining table. After eating, right after coffee, a small cup of this nectar gladdens the heart and helps digest better.
Aging
Minimum3 years in characteristic Piedmontese ashwood barrels of about 700 liters.
The master distiller and controller certify that this grappa has been aged in wood for the above period before bottling
