The still-fresh pomace from Merlot and Cabernet Sauvignon grapes is distilled traditionally in old copper stills. After the distillation process this grappa still has 75 Vol%. With the addition of distilled water, this pomace spirit reaches an alcohol content of 40 percent by volume. Afterwards, this grappa rests for a total of 6 months in stainless steel tanks to be finally bottled gently filtered.
