Grapes are only harvested by hand and into crates. Fermentation is spontaneous with naturally occurring yeasts and takes place without contact with the skins. The cuvée is created with most of the grapes from the current harvest and some of the reserve wine from the previous year that has been aged in concrete tanks. The wine is bottled, and then the second in-bottle fermentation takes place, which allows the “mousse to take”. The wine then ages for about 30 months on its own yeasts until remuage and disgorgement. Dosage is Brut, with about 7 g/l of cane sugar dissolved directly into the wine at disgorgement.
