Champagne “Sauvage”. Just one grape variety Pinot Meunier, three distinct parcels all in the commune of Vandieres. These parcels have three different soils – one of clay, one of sand and the last of pure chalk – two different exposures two southeast and one northeast, and three vintages.
This is the identity card for Sauvage along with 4,032 numbered bottles personally designed and created by Geoffrey. Malolactic fermentation is not carried out, but the wine does rest on the lees for more than 42 months, and there is no dosage – zero sugar – at disgorgement.
A Champagne that wants to show how even Pinot Meunier can push itself “beyond” its limits – considered to have sensory simplicity and poor aptitude for aging. Sauvage certainly does not lack character, and with a dry palate, it boasts remarkable length.
