The name Cervaro derives from the noble family that owned the Castle of Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small portion of Grechetto for a wine designed to age over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and barrel aging with the first vintage in 1985.
Straw yellow in color, it denotes an intense and complex aroma, with aromatic scents such as citrus, pears and acacia flowers blended together with vanilla. The taste is full and well-structured, with sweet notes of butter, hazelnut and at the same time persistent and mineral. Pair with white meats and poultry.
